This is my all time favourite Paleo friendly icing recipe that I use on a regular basis. It's a slight variation from my Chocolate Avocado Mousse recipe omitting the coconut cream to leave replicate the thick icing-like texture. I love using this paired with my Beetroot Chocolate Brownies made into a delicious brownie slice and sprinkled with coconut.
Avocado Chocolate Icing
2 very ripe avocados, peeled and pitted
100g dark chocolate
1/4 C unsweetened cocoa powder
1/4 C liquid sweetener (honey, maple syrup or brown rice malt syrup)
1/4 C almond milk
1 tsp natural vanilla extract
In a food processor, add all ingredients and process until smooth and creamy.
Spread over cake, muffins or just eat straight from the jar!
