If there’s one thing I love any time of the year it has got to be a good cookie dunked into milk. Having recently adapted a Paleo influenced lifestyle I wanted to make a cookie that was both moreish and delicious yet didn't put me off track. I made these gems which have been one of my favourite recipes to date! They are so yummy straight out of the oven dunked into a warm glass of almond milk.
CHEWY CACAO COOKIES
1 C (300g) almond butter
1 C coconut sugar
1/2 C cacao or cocoa powder
1 free-range egg
1 tsp vanilla extract
1 tsp baking soda
1/4 C (45g) dark chocolate
LETS MAKE IT
Preheat oven to 180 degrees Celsius on bake.
Add almond butter and coconut sugar into a bowl, using your hands combine well. Add egg and vanilla essence and incorporate ingredients.
In a separate bowl, mix together cacao powder, cocoa & chocolate (if using) and baking soda in a separate bowl. Sift this into the first mix.
Again, using your hands, fuse the ingredients together to form a well combined mixture. If need be, take the mixture from the bowl and knead on the bench.
On a baking tray lined with parchment/baking paper measure out 1/4 C mixture and roll into a ball. You may have to moisten your fingers to assist. Flatten the ball with a fork making sure the mixture has minimal cracks. As the mixture cooks, you want to avoid them breaking apart. Do this with the remainder of the mixture until there is no more left.
Place in the oven and allow to cook for 12-15 minutes. Remove from the oven and let rest for at least 10 minutes before transferring to a cooling rack. The cookies will be very soft upon removal from the oven and you must ensure they are allowed time to set before transferring to avoid them breaking.
Once cookies are mostly cooled, eat as you wish. I like to serve mine with a cold glass of almond milk and dunk the sucker in!
