This platter board is used in almost every meal over the Spring/Summer seasons and with us being on our first week of Spring I created this delicious burger/salad board to entertain on a weekend with friends. It's a great DIY as you can just throw everything on the board and you can choose whether you'd like a salad or burger. With this option, there's usually not much room for leftovers! For the patties - I chose to make my Easy Chickpea Patty recipe which is so simple and can be made using a selection of pantry staples.
I've been trying to incorporate vegetarian meals lately as I have a lot of friends who have decided to eat more plant based and it's always great to have meal ideas to suit everyone - especially when you're hosting a lunch or dinner in the Spring/Summer.
I kept this board super simple using avocado, tomato, rocket and aioli. You could easily add your favourite fillings also. The buns that I use are a really good size - not too big, not too small. They're the Home St by Bakeworks Sprouted Good Seed Buns. I always have these in my freezer and pre-cut them. To heat, all I do is pop them in the toaster and use the crumpet setting to grill the inside and defrost. Alternatively, baps are a great substitute and are super soft.
Easy Chickpea Patties
For the chickpea patties:
1 can of chickpeas
1 tablespoon paprika
2 tablespoons dried coriander
2 garlic cloves, minced
1/2 onion, diced
salt and pepper to season
1/4 cup bread crumbs
1/4 cup of flour, to dust
3 tablespoons olive oil
For the salad/burger board:
4 x burger buns
1 packet of rocket
1 large tomato, sliced
2 avocado, smashed
1/4 cup aioli
LETS MAKE IT
Take you chickpeas and drain the liquid. Rinse the chickpeas under cold running water to remove any of the liquid.
In a large fry pan on a medium heat, add one tablespoon of olive oil followed by the diced onion and minced garlic. Saute until the onion is translucent and the garlic has browned. Around 3-5 minutes. Take off the heat and put to the side.
Get your serving platter ready by adding your burger buns, rocket, tomato. Place your avocaodo and aioli into seperate ramekins and add these to the platter.
In a food processor, add the chickpeas, paprika, coriander, onion, garlic, salt + pepper and egg. Beat until smooth. Transfer to a bowl and fold in bread crumbs to combine.
Seperate the parts into 4 parts. Dust your bend with flour and roll each part into a ball. Flatten allowing each side to be lightly coated in flour.
Taking your large fry pan you used before and add two tablespoons of olive oil and place over a medium heat. Add patties allow to fry on each side for 4 minute until crispy and golden.
Transfer the chickpea patties to the platter and eat warm. Serve with side plates and begin constructing your burger or salad.
