Eggs In A Cloud
¼ cup shredded parmesan cheese
2 tablespoons parsley, roughly chopped
salt & pepper to taste
LETS MAKE IT
Preheat oven to 225 degrees celcius before lining a baking tray with non-stick paper.
Take your eggs and separate the whites from the yolks. Place the whites in a large mixing bowl and each individual yolk in a separate ramekin or container
Whip the whites at high speed for around 2 -3 minutes or until you have formed stiff peaks.
Gently stir in the cheese, before dividing the egg white mixture into 4 even parts on the baking sheet. Make sure these are cloud shaped.
Take a spoon and make a groove in the center of the cloud. This is where you will place the yolk later.
Bake for 3 minutes, then slide the cookie sheet out and gently slip a yolk into each well. Cook for another 3 minutes.
Gently remove with a spatula, sprinkle with parsley and serve!
