Home-made Poke Bowl

Home-made sALMON & PRAWN Poke Bowl

INGREDIENTS

150 gram fresh raw salmon fillet, skinned and cubed
4 king prawns - cooked
80 grams surimi or crab, shredded
1 tablespoon mayonnaise

1/2 cucumber, thinly slice
3 cups mesclun mix - rocket, spinach, edible flowers
1 small avocado, diced
1/4 cup edamame beans
2 tablespoons crispy shallots
1 sheet of nori

2 cups freshly cooked rice - white, brown or purple

Marinade/Dressing:
2 tablespoon soy sauce
2 tablespoon sesame oil

Sauce:
1/4 cup mayonaise
1 tablespoon wasabi paste
1 teaspoon lemon juice

Optional additions:
1/3 cup cubed mango
1/3 cup cubed pineapple
2 tablespoons coconut shaved

LETS MAKE IT

First start by making sure you've prepped all the ingredients as necessary. Make sure you've put rice on and cooked it according to the ingredients on the packet. Also ensure that the salmon has been skinned and cubed, the cucumber sliced, the surimi/crab shredded etc.

Take a small bowl and mix together the marinade/dressing. Add your cubed salmon into the bowl and place in the fridge allowing it to marinade for 10-15 minutes while you get the other ingredients ready. In another small bowl, add your sauce ingredients together and mix until smooth and all the ingredients are incorporated. 

In another small bowl add your surimi or crab and mix together with 1 tablespoon mayonnaise. Set aside. 

Take a bowl or container and add your rice to one half. Add the mesclun mix to the other half. In small sections add your ingredients. Place you edamame, slice cucumber and diced avocado onto your mesclun. Remove the salmon from the marinade and layer onto your rice half along with the prawns and surimi/crab mixture. 

Dress with the additional dressing left over and the wasabi mayonnaise sauce you made earlier. Sprinkle with shallots and cut up pieces of nori and enjoy!
