I created these pulled taco chicken recipe to pair with my Cheese Taco Shell recipe. Not only is this recipe low in carbs, there's no added sugar at all in this which you may find if you were using a taco spice mix from the supermarket. I love this recipe and have used it in wraps as well as on top of kumara chips as a nacho alternative. It's my go-to staple for my Mexican styled meals.
Pulled Taco Chicken
3 cups cooked chicken breast, shredded
1 tbsp chilli powder
1 tsp ground cumin
1 tsp ground himalayan rock salt
1 tsp ground black pepper
1/2 tsp paprika
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper flakes
1/4 tsp dried oregano
LETS MAKE IT
In a small bowl mix together spice mix ingredients. Add 2 tbsp of water until you create a paste.
In a saucepan over a medium-low heat, add paste and 2 C water. Combine with chicken breast stirring so that all chicken is covered.
Bring to a simmer until all water has evaporated, stirring occasionally.
Serve with cheese taco shells.
