Do you ever try to make better choices but struggle to find a healthy alternative? That was my dilemma when this recipe was created. I love lemon meringue pie! Something about the delicious tarts freshly baked at my local cafe makes melt and cave in so often.
A few weekends ago, I was craving a lemon meringue pie so thought I'd put on an apron and try to craft one from scratch for me and the family. I changed around a lot of the traditional elements swapping them for healthier alternatives such as the normal short-cut pastry crust for an almond and coconut crust. I thickened the lemon curd with tapioca which gave a glossy finish. I also used my much loved Natvia (which is my favourite low carb, sugar free sweetener as many of you will know) in the meringue part.
It went down such a treat with the entire family - I think I'm going to have to make mini versions to freeze so I can have them myself on a day when I need a little pick me up.
